Ingredients
  

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet taco seasoning mix
  • 1 jar salsa 16 ounces
  • 1 can diced tomatoes with green chilies 10 ounces
  • 1/2 cup chicken broth
  • q.s. toppings shredded lettuce, diced tomatoes, shredded cheese, sour cream, sliced jalapeños, fresh cilantro

Equipment

  • Slow cooker
  • Forks (or stand mixer for shredding)
  • Measuring cups
  • Can opener
  • Tortillas, warmed Corn or flour

Method
 

  1. Place your chicken breasts in the slow cooker insert and sprinkle the taco seasoning over the top.
  2. Pour the salsa over the chicken and then add the diced tomatoes with green chilies.
  3. Add the chicken broth to ensure everything stays moist while cooking.
  4. Place the lid on the slow cooker and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  5. Once cooked, shred the chicken in the slow cooker using two forks.
  6. Optional: Stir in the juice of one lime and chopped fresh cilantro for added flavor before serving.

Notes
