Ingredients
  

  • 2 cups long-grain white rice
  • 3 cups chicken broth
  • 1/4 cup soy sauce low-sodium
  • 1 tbsp toasted sesame oil
  • 1/4 tsp garlic powder
  • 1 pound boneless, skinless chicken breasts thinly sliced
  • 1/4 cup honey
  • 1/4 cup fresh lime juice about 2 limes
  • 1/2 tsp grated fresh ginger
  • 1 large ripe avocado sliced

Method
 

  1. Pour chicken broth into a medium saucepan, bring to a boil, and stir in the rice, soy sauce, sesame oil, and garlic powder. Cover and simmer on low for 20-25 minutes.
  2. In a mixing bowl, whisk together honey, lime juice, and grated ginger. Add chicken slices and coat well. Let marinate for at least 15 minutes.
  3. Heat a grill pan or skillet over medium-high heat. Grill chicken slices for about 4-5 minutes per side until cooked through.
  4. On a serving dish or individual plates, start with a base of rice, layer with grilled chicken, and top with avocado slices.
  5. Serve immediately, garnished with sesame seeds and cilantro, with lime wedges on the side.
