Ingredients
  

  • 500 g zucchini
  • 4 eggs
  • 3 tablespoons flour
  • 1 tablespoon chopped parsley
  • 1 teaspoon olive oil

Method
 

  1. Wash and grate the zucchini, sprinkle with salt, and let sit for 10 minutes to draw out moisture.
  2. Squeeze the zucchini with a clean towel to remove excess moisture.
  3. In a mixing bowl, combine grated zucchini, eggs, flour, and parsley, stirring until thick and sticky.
  4. Heat a non-stick skillet over medium heat and add olive oil.
  5. Shape small portions of the mixture into flat patties and place them in the skillet.
  6. Cook patties for 3–4 minutes on each side until golden brown.
  7. Transfer cooked patties to paper towels to absorb excess oil and serve warm with dipping sauces.
