  • 2 medium Sweet Potatoes, peeled and diced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Sea Salt
  • 0.5 teaspoon Black Pepper
  • 1 red Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 lemon Zest and Juice
  • 1 tablespoon Fresh Rosemary, chopped
  • 1 tablespoon Fresh Thyme Leaves
  • 1 teaspoon Smoked Paprika

Method
 

  1. Peel and dice the sweet potatoes into small cubes.
  2. Chop the red onion and mince the garlic.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the diced sweet potatoes, sprinkle with sea salt and black pepper, and cook until golden brown and tender.
  5. Once the sweet potatoes are almost done, add the chopped red onion and minced garlic.
  6. Let the onion and garlic soften, then add the fresh herbs, lemon zest, and juice.
  7. Stir everything together until fragrant and finish with a dash of smoked paprika.
