Ingredients
  

  • 1 package graham crackers, crushed finely (14.3 oz)
  • cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 ½ cups whipped topping (like Cool Whip), thawed
  • 1 can pure pumpkin puree (15 oz)
  • 1 package instant vanilla pudding mix (3.4 oz)
  • 2 cups cold whole milk
  • 1 tsp pumpkin pie spice
  • q.s. additional whipped topping for topping optional
  • q.s. crushed pecans or caramel sauce optional

Method
 

  1. Crush graham crackers until they resemble fine sand and mix with melted butter until coated.
  2. Press the mixture firmly into the bottom of a 9x13 inch dish to create a solid crust.
  3. Beat softened cream cheese until smooth, then gradually mix in powdered sugar and fold in whipped topping.
  4. Spread the cream cheese layer evenly over the crust.
  5. Whisk cold milk and instant vanilla pudding mix together until thick, then mix in pumpkin puree and pumpkin pie spice.
  6. Spread the pumpkin layer gently over the cream cheese layer.
  7. Top with a final layer of whipped topping and refrigerate for at least 4 hours or overnight.
