  • 1/2 cup sweetened condensed milk
  • 1/4 cup key lime juice freshly squeezed or bottled
  • 1 tsp key lime zest
  • 1 cup whipped cream store-bought or homemade
  • q.s. key lime slices for garnish (optional)
  • q.s. extra lime zest for garnish (optional)

Method
 

  1. In a medium bowl, mix graham cracker crumbs and sugar; stir in melted butter until coated.
  2. Divide the crumb mixture into serving glasses and press firmly to form the crust.
  3. In a large mixing bowl, beat softened cream cheese until smooth; mix in sweetened condensed milk, key lime juice, and key lime zest until well combined.
  4. Gently fold half of the whipped cream into the cream cheese mixture until airy.
  5. Layer the cheesecake filling into the crusts in the glasses, leaving room for whipped cream.
  6. Top each parfait with a dollop of remaining whipped cream and garnish with key lime slices or zest.
  7. Refrigerate the parfaits for at least 2 hours to set before serving.
