Ingredients
  

  • 500 g fresh broccoli
  • 150 g grated cheese (cheddar, mozzarella, or a mix)
  • 1 egg
  • 50 g breadcrumbs
  • 2 tablespoons flour
  • 1 tablespoon milk
  • 1 clove garlic minced
  • to taste salt and pepper
  • as needed oil for frying or baking

Equipment

  • Large mixing bowl
  • Pot for boiling broccoli
  • Frying pan or baking sheet
  • Parchment paper (if baking)
  • Slotted spoon (for frying)

Method
 

  1. Cut the broccoli into small florets and boil them in salted water for 5-7 minutes until tender but not mushy. Drain and cool slightly before chopping.
  2. In a large bowl, combine the cooked broccoli, grated cheese, egg, breadcrumbs, flour, minced garlic, milk, salt, and pepper. Mix until it forms a sticky dough.
  3. Scoop small handfuls of the mixture and roll into balls about 4 cm wide. Place on a tray lined with parchment paper.
  4. For frying, heat oil in a pan over medium heat and cook the bites for 2-3 minutes per side until golden brown. For baking, preheat the oven to 180°C (350°F) and bake for 15-20 minutes until crispy.
