Ingredients
  

  • 1 lb freshly ground beef
  • to taste salt and pepper
  • 4 slices American cheese
  • 4 slices cheddar cheese
  • to taste special sauce (mayonnaise, ketchup, mustard, pickles, onions)

Method
 

  1. Divide the ground beef into 8 equal-sized balls and sprinkle each ball generously with salt and pepper.
  2. Heat a heavy skillet (preferably cast iron) until hot.
  3. Smash each beef ball into a thin patty using a sturdy spatula, cooking for 2–3 minutes until golden brown.
  4. Flip the patties and cook for another 2–3 minutes while adding one slice of American cheese and one slice of cheddar cheese to each patty.
  5. Lightly toast the buns in the skillet for 1–2 minutes.
  6. Assemble the burgers by spreading special sauce on the bottom bun, layering with pickles, onions, and cheesy patties, then topping with the other half of the bun.
