- Divide the ground beef into 8 equal-sized balls and sprinkle each ball generously with salt and pepper.
- Heat a heavy skillet (preferably cast iron) until hot.
- Smash each beef ball into a thin patty using a sturdy spatula, cooking for 2–3 minutes until golden brown.
- Flip the patties and cook for another 2–3 minutes while adding one slice of American cheese and one slice of cheddar cheese to each patty.
- Lightly toast the buns in the skillet for 1–2 minutes.
- Assemble the burgers by spreading special sauce on the bottom bun, layering with pickles, onions, and cheesy patties, then topping with the other half of the bun.
