Ingredients
  

  • 2 cups wheat flour (all-purpose, NOT self-rising)
  • 8 large eggs at room temperature
  • 1 and 1/2 cups granulated sugar
  • 1 tablespoon vanilla essence optional

Equipment

  • Large mixing bowl
  • Wire whisk
  • Silicone spatula
  • 9-inch round cake pan
  • Fine-mesh sieve or sifter

Method
 

  1. Sift the flour and sugar into separate bowls.
  2. Crack the 8 eggs into the bowl of your stand mixer.
  3. Beat the eggs on high speed for 5 minutes until thick and pale.
  4. Gradually add the sifted sugar to the whipped eggs on medium-low speed.
  5. Add vanilla essence and whip on high speed for 10 minutes.
  6. Gently fold in the sifted flour spoon by spoon using a whisk or spatula.
  7. Grease the bottom of a 9-inch round cake pan and line it with parchment paper.
  8. Pour the batter into the pan and bake at 350°F (180°C) for 40-45 minutes.
  9. Allow to cool for about 1 hour before removing from the pan.
