Ingredients
  

  • 300 g chicken breast, cut into thin strips
  • 100 g cornflour (cornstarch)
  • 1 piece egg white
  • 2 piece spring onions (green onions), chopped
  • 1 tbsp garlic and ginger paste divided
  • 2 tbsp dark soy sauce for marinade
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1 tsp white pepper
  • Vegetable oil for frying
  • 3 tbsp dark soy sauce for stir-fry sauce
  • 4 tbsp honey
  • 1 tbsp sriracha adjust to your heat preference
  • 2 tbsp lemon juice

Equipment

  • Wok or deep frying pan
  • Sharp knife and cutting board
  • Two mixing bowls
  • Slotted spoon or spider strainer
  • Paper towels for draining

Method
 

  1. Marinate the chicken by combining it with dark soy sauce, 1 tbsp of garlic and ginger paste, sesame oil, sugar, and white pepper, and let sit for at least 10 minutes.
  2. Whisk together honey, lemon juice, dark soy sauce, and sriracha in a bowl for the sauce.
  3. Mix egg white into the marinated chicken and coat it with cornflour.
  4. Heat vegetable oil in a wok or deep pan to 180°C (350°F) and fry the chicken in batches for 1-2 minutes until light golden; drain.
  5. For the second fry, heat the oil back up and fry the chicken for 2-3 minutes until dark golden and crispy; drain.
  6. Heat a clean pan with 1 tbsp oil, add remaining garlic-ginger paste for a few seconds, then pour in the sauce and let it bubble for about 30 seconds.
  7. Add the fried chicken into the pan, toss to coat, and serve immediately topped with chopped spring onions.
