- In a mixing bowl, combine grated zucchini, eggs, flour, salt, and pepper.
- Heat a skillet over medium heat and add some oil.
- Drop spoonfuls of the mixture into the hot skillet and flatten slightly with a spatula.

- Remove from skillet and place fritters on a serving plate. Serve warm.
