Ingredients
  

  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • q.s. Salt and black pepper, to taste
  • 1 tsp Italian seasoning
  • 1 tsp red pepper flakes (optional)
  • q.s. Fresh parsley, chopped for garnish
  • 10 oz cheese tortellini
  • 1 tbsp butter (for the sauce)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 clove garlic, minced (for the sauce)
  • q.s. Salt and black pepper, to taste (for the sauce)

Equipment

  • Large pot for boiling pasta
  • Large skillet for searing steak
  • Small skillet for Alfredo sauce
  • Tongs for tossing steak
  • Colander for draining pasta

Method
 

  1. Bring a large pot of salted water to a boil, add the cheese tortellini, and cook according to package instructions until al dente; drain and set aside.
  2. Pat the steak pieces dry with a paper towel and season generously with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium-high heat, add the steak bites in a single layer, and sear for 2-3 minutes per side until nicely browned; remove from skillet and set aside.
  4. In the same skillet, reduce heat to medium, add butter and minced garlic, sauté for 30 seconds, and add red pepper flakes if using.
  5. Return the steak bites to the pan and toss them in the garlic butter until well coated.
  6. In a separate skillet, melt 1 tbsp butter over medium heat, add minced garlic, and sauté briefly; pour in heavy cream and bring to a gentle simmer for 2-3 minutes.
  7. Stir in Parmesan cheese until melted and creamy; season with salt and pepper to taste.
  8. Add the cooked tortellini to the Alfredo sauce and stir to coat; plate the creamy tortellini and top with garlic butter steak bites, garnished with chopped parsley and extra Parmesan if desired.
