Garlic Butter Steak Rigatoni

Ingredients
  

  • 1.5 lbs sirloin steak, cut into bite-size pieces
  • 12 oz rigatoni pasta
  • 2 tbsp olive oil
  • 3 tbsp butter, divided
  • 1 tbsp minced garlic
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • to taste Salt and black pepper
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 4 oz cream cheese
  • to taste Splash of reserved pasta water
  • for garnish Chopped parsley

Equipment

  • Large pot for boiling pasta
  • Large, deep skillet or cast-iron pan
  • Tongs for turning steak and tossing pasta
  • Wooden spoon or silicone spatula for stirring
  • Colander for draining pasta

Method
 

  1. Bring a large pot of salted water to a rolling boil and cook rigatoni until al dente. Reserve 1 cup of pasta water and drain.
  2. Pat steak bites dry and season with garlic powder, smoked paprika, salt, and black pepper.
  3. Heat olive oil in a large skillet over medium-high heat and sear steak in a single layer for 2-3 minutes per side, then remove and set aside.
  4. Lower the heat to medium, add 2 tablespoons of butter to the skillet, and melt.
  5. Add minced garlic to the melted butter and sauté for about 60 seconds.
  6. Slowly pour in heavy cream, then add cream cheese in small chunks, stirring until melted and smooth.
  7. Reduce heat to low and stir in grated Parmesan and shredded mozzarella.
  8. Add the drained rigatoni to the skillet and toss to coat in the sauce.
  9. Add steak bites back to the skillet and gently stir to combine and warm through.
  10. Melt the remaining tablespoon of butter and drizzle over the top before serving.
  11. Transfer to a serving dish or plate, garnish with chopped parsley, and serve.
