Ingredients
  

  • 1 pound boneless, skinless chicken breast cut into 1-inch cubes
  • 1 whole fresh pineapple peeled, cored, and cut into chunks
  • 2 tablespoons olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic minced
  • 1 teaspoon ground ginger
  • to taste salt and pepper to taste

Method
 

  1. In a bowl, whisk together olive oil, soy sauce, honey, minced garlic, ground ginger, salt, and pepper. Add the chicken and toss to coat.
  2. Let the chicken marinate for at least 30 minutes (up to 2 hours in the fridge).
  3. Soak wooden skewers in water for 20 minutes if using; skip if using metal skewers.
  4. Thread chicken and pineapple onto skewers, alternating between them.
  5. Preheat the grill to medium-high heat.
  6. Place the skewers on the grill and cook for 3-4 minutes per side until chicken is cooked through and pineapple has grill marks.
