- In a small bowl, whisk together Dijon mustard, honey, soy sauce, olive oil, minced garlic, dried thyme, dried rosemary, paprika, salt, and black pepper until well combined.
- Place the salmon fillets in a shallow dish or resealable plastic bag and pour the honey mustard marinade over the salmon, ensuring each fillet is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper or lightly grease it. Place the marinated salmon fillets on the prepared baking sheet and bake for 15-20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Garnish with fresh lemon wedges if desired and serve hot with your choice of sides.
