Ingredients
  

  • 1 cup bread crumbs
  • 1/2 cup all-purpose flour
  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp fresh parsley, chopped optional, for garnish

Method
 

  1. Pound the chicken breasts to an even thickness and season with garlic powder, onion powder, salt, and black pepper.
  2. Set up three shallow bowls for flour, beaten eggs, and a mixture of bread crumbs and Parmesan cheese.
  3. Dredge each chicken breast in flour, dip in egg, then coat in the bread crumb mixture.
  4. Heat olive oil in a large skillet over medium heat and cook the breaded chicken for 4-5 minutes per side until golden brown and cooked through (165°F internal temperature).
  5. Sprinkle mozzarella cheese over the chicken and broil for 2-3 minutes until melted and bubbly.
  6. Garnish with chopped parsley and serve hot.
