Ingredients
  

  • 3 medium zucchini
  • 100 g grated parmesan cheese
  • 100 g panko or classic breadcrumbs
  • 2 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika optional
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • to taste black pepper
  • 2 tablespoons fresh parsley, chopped for garnish

Method
 

  1. Preheat your oven to 200°C (about 400°F) and line a baking sheet with parchment paper.
  2. Wash and dry the zucchini thoroughly, then cut into even 1 cm sticks.
  3. In a bowl, combine the breadcrumbs, parmesan, garlic powder, smoked paprika, oregano, salt, and pepper.
  4. Crack the eggs into another bowl and whisk them.
  5. Dip each zucchini stick into the beaten egg, letting excess drip off, then roll in the breadcrumb mixture until fully coated.
  6. Place the coated sticks on the prepared baking sheet, ensuring space between each one.
  7. Lightly drizzle the coated zucchini sticks with olive oil and bake for 20–25 minutes, flipping halfway through.
  8. Once baked, sprinkle with fresh parsley and serve hot with your favorite dipping sauce.
