- In a small bowl, mix honey mustard, barbecue sauce, and buffalo sauce until well combined.
- Preheat the oven to 350°F (175°C).
- Slice croissants open lengthwise, keeping one edge connected.
- Spread the spicy buffalo honey mustard sauce inside each croissant.
- Layer slices of Black Forest ham and pepper jack cheese inside the croissants.
- Place assembled croissants on a baking sheet coated with non-stick oil spray.
- Brush the tops of croissants with melted butter and sprinkle with poppy or sesame seeds if using.
- Bake in the preheated oven for about 8 minutes, until cheese is melted and croissants are golden brown.
- Remove from oven, let cool for a minute or two, then serve warm.
