Ingredients
  

  • 1.5 kg beef for braising (like chuck roast or brisket)
  • 1 kg potatoes (Yukon Gold or Russet)
  • 2 carrots
  • 2 onions
  • 3 cloves garlic
  • 500 ml beef broth
  • 200 ml red wine (like Cabernet or Merlot)
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • q.s. olive oil for searing
  • q.s. salt and black pepper to taste
  • q.s. butter (for the mash)
  • splash milk or cream (optional for the mash)

Equipment

  • Large, heavy-bottomed pot or Dutch oven
  • Sharp knife and cutting board
  • Potato masher or ricer
  • Measuring cups and spoons
  • Tongs
  • Large pot for boiling potatoes

Method
 

  1. Preheat your oven to 160°C (325°F).
  2. Heat olive oil in a pot over medium-high heat and sear the beef until browned.
  3. Remove the beef and sauté chopped onions, carrots, and minced garlic in the pot.
  4. Return the beef to the pot, pour in red wine and beef broth, add thyme and bay leaves, and season.
  5. Cover and braise in the oven for 2 to 3 hours.
  6. While the beef cooks, prepare the potatoes by peeling and cutting them into chunks.
  7. Boil the potatoes for 15-20 minutes until tender.
  8. Drain potatoes, then mash with butter and optional milk or cream; season to taste.
  9. Let the braised beef rest, then serve topped with the mash and sauce.
