  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Lay out your bacon strips and brush with maple syrup; bake for 15-20 minutes until crispy.
  3. Let the bacon cool on paper towels and chop into bite-sized pieces.
  4. Lower the oven temperature to 350°F (175°C).
  5. In a large bowl, beat together softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  6. Add eggs one at a time, then mix in 1 tablespoon of maple syrup and vanilla extract.
  7. In another bowl, whisk together flour, baking soda, and salt.
  8. Gradually mix the dry ingredients into the wet ingredients until just combined.
  9. Gently fold in chocolate chips and chopped bacon.
  10. Drop rounded spoonfuls of dough onto a lined baking sheet, about 2 inches apart.
  11. Bake for 10-12 minutes until golden brown at the edges while the center looks just set.
  12. Let the cookies rest on the sheet for 5 minutes, then transfer to a wire rack to cool.
