- Spread a thin layer of Boursin on one side of each slice of bread.
- Lay a piece of smoked salmon on two of the Boursin-covered slices.
- Add a slice of melting cheese on top of the salmon.
- Top each half with another slice of bread, Boursin-side down, and press gently to seal.
- Heat a skillet over medium heat and add a tablespoon of butter.
- Cook the sandwiches for 2-3 minutes per side until golden brown.
- Cut the sandwiches diagonally and serve hot.
