Ingredients
  

  • 100 g Smoked salmon
  • 100 g Boursin or herbed fresh cheese
  • 4 slices White bread (pain de mie works best)
  • 2 slices Melting cheese
  • 1 tablespoon Butter for toasting

Method
 

  1. Spread a thin layer of Boursin on one side of each slice of bread.
  2. Lay a piece of smoked salmon on two of the Boursin-covered slices.
  3. Add a slice of melting cheese on top of the salmon.
  4. Top each half with another slice of bread, Boursin-side down, and press gently to seal.
  5. Heat a skillet over medium heat and add a tablespoon of butter.
  6. Cook the sandwiches for 2-3 minutes per side until golden brown.
  7. Cut the sandwiches diagonally and serve hot.
